Roasted honey chicken breasts with roasted sweet potatoes and dates
Ingredients
- 4 chicken breasts
- 1 cloves garlic, chopped
- 3 tablespoons soya sauce
- 1/3 cup honey
- 2 tablespoons olive oil
- 1/4 cup water or chicken broth
- Salt and pepper to taste
Vegetables:
- 3 sweet potatoes, chopped
- 1 white onion, chopped
- 14 large dates, pitted and chopped
Directions
- In a mixing bowl, stir together honey, water, soya sauce, olive oil and garlic to make a marinade.
- Line a large baking sheet with parchment paper and preheat oven to 350F degrees.
- Chop vegetables and line veggies + dates on the bottom of the baking sheet. Place chicken breasts in the center of the baking sheet. Add mixture on top of the vegetables and chicken. Season with salt + pepper on top.
- Place chicken and vegetables in the oven for 35-40 minutes or until chicken is cooked to your liking.
- Remove from oven. Serve and enjoy!
