In a mixing bowl, stir together honey, water, soya sauce, olive oil and garlic to make a marinade.
Line a large baking sheet with parchment paper and preheat oven to 350F degrees.
Chop vegetables and line veggies + dates on the bottom of the baking sheet. Place chicken breasts in the center of the baking sheet. Add mixture on top of the vegetables and chicken. Season with salt + pepper on top.
Place chicken and vegetables in the oven for 35-40 minutes or until chicken is cooked to your liking.
