Rodney Bowers' Habanero Hot Sauce

Ingredients

  • 2 tablespoons canola oil
  • 5 cloves garlic smashed
  • 2 carrots roughly chopped
  • 2 tomatoes, rough chop
  • One sweet onion rough chop
  • 1/4 cup lime juice
  • 4 habanero peppers, halved
  • 2 tablespoons apple cide vinegar
  • 2 tablespoons honey
  • Salt to taste

Directions

  1. Heat the oil in a skillet on medium heat. Add the carrots and let them cook until soft Then add the garlic , onion, tomatoes, habaneros and cook, stirring occasionally.
  2. Once everything is cooked toss it in blender and add the lime juice, vinegar and honey. Purée with 1/4 cup of water to thin it out.
