Classic creamed spinach

This is the only way to eat spinach, we promise you that! Thanks to the butter, shallots, cream and gruyere, you’ll never look at leafy greens the same. 



  • 1/4 cup butter
  • 2 shallots, finely minced
  • 3 cloves garlic
  • 1/2 cups cream
  • 1/4 cup sour cream
  • 1/4 teaspoon nutmeg
  • 1/3 cup gruyere, grated
  • 800g frozen spinach, thawed
  • Salt and pepper, to taste
  • Lemon, zested for garnish


  1. Melt the butter in a large saucepan, then add the shallots and garlic. Sweat for three to four minutes, then add the cream and sour cream.  Stir well and cook for another three to four minutes to reduce slightly. 
  2. Add the nutmeg, cheese, and spinach then season with salt and pepper to taste. Cook for five minutes, until thickened and all of the liquid has cooked off of the spinach. 
  3. Garnish with fresh lemon zest and enjoy!
