Duchess potatoes

Mashed potatoes are great, but here's a recipe that elevates your dinner date night. These duchess potatoes take a little more extra effort and make for a delicious and beautiful presentation.

Ingredients

  • 2 lb. yellow flesh potatoes, peeled and boiled in salted water
  • 1/2 cup cream
  • 4 tablespoons butter
  • 3 yolks
  • 1 garlic clove, minced
  • 1/4 bunch chives, finely sliced

Directions

  1. Pass the cooked potatoes through a ricer.
  2. Add the cream, butter, yolks, and garlic and mix well to combine.
  3. Add potato mixture to a piping bag (or simply spread into a nice casserole dish) and pipe the Duchess potatoes into your casserole dish or large shallow ramekin for an artful presentation. 
  4. Using a pastry brush, paint some melted butter on top. 
  5. Bake at 375° F for 15 to 20 minutes, then broil for one to two minutes for extra browning. Top with fresh chives and enjoy!
