Rod's insta chilli

Make chilli any time of the day with this quick and delicious recipe.

Ingredients

  • 2 onions, diced
  • 1 red pepper, seeded and diced
  • 1 poblano pepper, seeded and diced (optional)
  • 2 jalapenos, seeds removed and minced
  • 4 garlic cloves (minced)
  • 6 oz tomato paste
  • 3 teaspoon red chili powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 2 teaspoons cumin
  • 2 bay leaves
  • Salt, to taste
  • 4 cups water
  • 4 cups vegetable stock
  • 12 cups tvp granules
  • 3/4 cup green lentils
  • Worcestershire sauce and tobasco sauce, to taste
  • Cheese and cilantro, to garnish

Directions

  1. Add some oil to the multi-cooker on the Sautee setting.
  2. Add the onions peppers chillies and garlic and cook until soft
  3. Add the tomato paste and sprinkle in the spice mixture to coat.
  4. Stir until combined.
  5. Add the water veg stock, bay leaves, TVP and lentils, and stir until combined.
  6. Hit the pressure cooker button.
  7. Simmer for another 30 minutes.
  8. Taste and adjust seasoning.
  9. Add a splash of Worcestershire sauce and Tabasco.
  10. Garnish with cheese and cilantro. Serve and enjoy!
