Salt fish fritters

Ingredients

  • 400 Fresh or frozen cod fish (boneless and skinless)
  • 1 tablespoon thyme
  • 1 teaspoon minced garlic
  • 1 tablespoon diced scotch bonnet pepper
  • 1/4 cup diced bell pepper (red and green)
  • 1/3 cup diced white onion
  • 3/4 cup Bobs Red Mill AP Baking flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 organic egg
  • Water
  • Pink Himalayan salt or Kosher salt
  • Avocado oil spray

Directions

  1. Boil cod until cook through but still firm-about ten minutes.
  2. Once cooked drain and let cool.
  3. Once cool break fish apart to small pieces and add salt to taste.
  4. Dice onions, peppers and thyme to a fine mince or pulse in magic bullet or food processor. 
  5. Lightly beat egg and combine with fish and vegetable mixture.
  6. Wisk together flour, baking soda and baking powder and slowly mix with fish mixture *use hands. Add water a tiny bit at a time-just enough to create a tacky/sticky mixture should not be too wet.
  7. Use one tablespoon to spoon to create the fritters place.
  8. Spray air fryer with avocado oil and spray tops of fritters.
  9. Place in single layer and cook on air fry at 390 for approximately seven minutes depending on machine or until golden brown or heat avocado oil in pan and pan fry on both sides until golden brown.

Oven instructions:

  1. Line baking sheet with parchment.
  2. Place fritters on parchment that has been sprayed lightly with avocado spray.
  3. Spray the tops of the fritter and bake on 400 for ten minutes.
  4. Change oven to broil between 450-500 and brown the tops for two minutes.
