Ingredients

4 chicken breasts

1 14oz can diced tomatoes

1/4 cup pickled jalapenos

6 bell peppers, variety of colors

1-1/2 red onions

2 cloves garlic, minced

2 limes, juiced
Seasoning:

3 tablespoons taco seasoning, OR:
-
1 tablespoon ancho powder
-
1/2 teaspoon roasted garlic powder
-
1/2 teaspoon onion powder
-
1 teaspoon smoked paprika
-
Pinch oregano
-
Pinch chilli flakes
-
2 teaspoons cumin
-
1 teaspoon salt
-
1 teaspoon pepper
For serving:

Directions
- Slice your onion and peppers into strips, mince your garlic and pickled jalapenos.
- Prepare your seasoning and coat chicken in seasoning.
- In a slow cooker, make a layer of diced tomatoes and pickled jalapenos. Add some vegetables and place your chicken on top. Add remaining vegetables, and then tomatoes and jalapenos. Add any leftover seasoning.
- Place on low for eight hours or high for four hours
- 30 minutes before finishing, remove some liquid from the slow cooker using a ladle.
- Mix in the slow cooker - you will notice the chicken will shred. Add your lime juice and cook for the remaining 30 minutes and then serve and enjoy with your favorite taco toppings!
