Ingredients
Meatballs
500 grams ground chicken
1 cup Buffalo Sauce (1/2 cup in the meat mixture, the other ½ cup to toss)
½ cup Tex-Mex grated cheese
1 teaspoon salt
1 teaspoon pepper
¼ cup parsley, finely chopped
½ cup breadcrumbs
1 teaspoon garlic powder
Dip
1 cup natural Greek yogurt
¼ cup blue cheese
¼ cup fresh chives finely chopped
½ teaspoon black pepper
Directions
Meatballs
Pre-heat the oven to 375 degrees Fahrenheit.
In a bowl, place the ground chicken then add ½ cup Buffalo sauce, grated cheese, salt, pepper, parsley, breadcrumbs and garlic powder. Mix together.
Roll into 1/2-inch mini meatballs and place them on a parchment lined baking sheet.
Bake in the oven for 12-15 minutes until the meatballs are cooked thoroughly.
In a clean bowl add the remaining half cup of Buffalo sauce. Remove the meatballs from the oven and immediately toss in the sauce.
Dip
For the dip combine the Greek yogurt, blue cheese, chives and black pepper. Place into a small serving bowl.
On a large platter arrange the meatballs with bamboo skewers and the dipping sauce in a bowl, serve family style.
