Cucumbers:
Dressing:

2 limes, juice

2 teaspoon (10 milliliters) fish sauce

1/4 cup (60 milliliters) vegetable oil

1/2 teaspoon (2.5 milliliters) chili flakes

1 tablespoon (15 milliliters) sugar

1 tablespoon (15 milliliters) honey
Salad:

1 cup (240 milliliters) bean sprouts

1 small red onion, julienned
Garnish:

Cilantro
-
Mint
-
Peanuts, crushed
Directions
Cucumber:
- Slice cucumber into thirds, and peel into ribbons lengthwise. Place onto sheet pan, sprinkle with salt and let it sweat for five minutes.
Dressing:
- In a bowl combine lime juice, fish sauce, vegetable oil, chili flakes, sugar, and honey.
Salad:
- In a large bowl, mix cucumbers, red onion, and bean sprouts. Dress and toss.
To serve:
- Garnish with cilantro, mint, and peanuts.
