Strawberry margarita

Another easy way to incorporate fruits in your cocktail is by the way of infusion—infusion just means soaking an ingredient in another and letting the flavours extract. Strawberries have great floral sweetness and take really well to infusion, especially for a premium quality tequila. A little bit of agave syrup to add sweetness but not too much, and paired with a fruit-infused salt is the perfect start to a ‘pretend it’s summer' cocktail.

Ingredients

  • 1/2 cup strawberries, halved
  • 1.5oz tequila
  • Spiced pineapple salt rimmer (optional)
  • 0.5oz agave syrup
  • 0.75oz lime juice

Directions

  1. Cut strawberries and pour them into a mason jar.  Add 750ml of tequila and let soak overnight.
  2. Strain through colander and press remaining juices with a spoon.
  3. Rim cocktail glass with salt rimmer. 
  4. Add strawberry-infused tequila, agave syrup, lime juice to a cocktail shaker and strain into the rimmed cocktail glass and add fresh ice. Enjoy!
