Summer sunshine cocktail


  • 1 1/2 oz rum
  • 3/4 oz red bitter aperitivo such as Campari
  • 1 1/2 oz pineapple juice
  • 1/2 oz freshly squeezed lime juice
  • 1/2 oz simple syrup
  • Pineapple frond, lime wheel or edible flowers, for garnish


  1. Add rum, aperitivo, pineapple and lime juices and syrup to a cocktail shaker with ice. 
  2. Shake well and strain into a glass with ice or crushed ice. 
  3. Garnish with pineapple frond. Enjoy!
