Sometimes the only acceptable meal is a bowl of french fries covered in spicy cheddar sauce, taco beef, and yummy fixings in your lap.

Ingredients
Fries
1 package (650g) frozen shoestring french fries
Toppings
1-2 ripe tomatoes, seeded, finely chopped
Pinch of sea salt
2 tablespoons olive oil
200 g ground beef (lean, extra-lean, whichever kind you prefer)
1 1/2 teaspoons chili powder
1/2 teaspoon chipotle chili powder
1 teaspoon sea salt
Cheese Sauce
1 tablespoon butter
1 tablespoon all-purpose flour
3/4 cup whole milk
1 cup medium cheddar cheese, freshly grated (note: skip the pre-grated cheese here, it doesn’t melt the same)
1 tablespoon pickled sliced jalapenos, drained and finely chopped
1/4 teaspoon sea salt, plus more to taste
Freshly cracked black pepper, to taste
Assemble
Green onions, thinly sliced, to garnish

Preheat oven to the temperature prescribed on the french fry package.
Line a baking sheet with parchment paper for the easiest cleanup.
If using the five-minute shoestring variety as recommended, put the fries into the oven when you begin making the cheese sauce. Otherwise, follow package directions and time accordingly.
Toppings
Season chopped tomatoes with a pinch of sea salt in a small dish and set aside.
Heat a small frying pan over medium. Once heated add olive oil, ground beef, chili powders, and sea salt. Cook while breaking up the meat with the edge of a wooden spoon and stirring to incorporate it all together, about five minutes until the meat is cooked through. Set aside.
Place your five-minute shoestring fries in the oven now.
Cheese Sauce
Heat a small saucepan over medium heat. Once heated add the butter and swirl until melted and foamy. Add the flour and cook for one minute while stirring constantly with a whisk.
Slowly pour in the milk while still whisking, and continue whisking until smooth and incorporated. Switch to a rubber spatula or wooden spoon and gently cook the sauce (formally called a “béchamel”) for one minute until slightly thickened. Add the freshly grated cheddar and chopped jalapenos and stir to melt the cheese.
Season with sea salt and freshly cracked black pepper to taste.
Assemble
Divide the french fries among two plates (if you’re sharing, that is). Pour half of the spicy cheddar sauce over each dish, then top with the taco beef, chopped tomatoes, and green onions.
