Taco casserole

Joy Bauer shares this family favourite recipe for taco casserole, made with ground turkey, black beans, corn and tortilla chips, and served with homemade salsamole. It's guaranteed to please everyone at the table!

Ingredients

Salsamole

  • 2 tablespoons salsa (store-bought or homemade)
  • 2 tablespoons guacamole (store-bought or homemade)

Taco Casserole

  • 1 pound ground turkey (90 – 94% lean)
  • 1 taco seasoning packet
  • 2 cups jarred salsa, mild or spicy
  • 1 (16oz) can black beans, rinsed and drained
  • 1 (16oz) can corn, rinsed and drained
  • 3-4 ounces tortilla chips
  • 2 to 2.5 cups shredded Mexican blend or sharp cheddar cheese, divided
  • Optional sides and toppings: sliced black olives and jalapenos, chopped lettuce, chopped tomatoes, extra salsa, guacamole, sliced scallions, chopped cilantro, light sour cream or Greek yogurt

Directions

For the Salsamole 

  1. Blend the salsa with the guacamole in a bowl. 
  2. Set aside for serving. 

For the Taco Casserole 

  1. Preheat oven to 375. 
  2. Mist a 9×13 casserole dish with nonstick oil spray and set aside.
  3. Coat a large, wide skillet with nonstick olive oil spray (or add one tablespoon bottled olive oil) and warm over medium-high heat. 
  4. Add the ground turkey and cook until no pink spots remain, crumbling the meat into small pieces with a spatula or wooden spoon as it cooks. 
  5. Add the taco seasoning packet, salsa, black beans and corn. Mix and simmer over the heat until everything is well combined and warmed through.
  6. Add a layer of tortilla chips to the base of the casserole dish and layer the meat mixture on top. 
  7. Sprinkle one cup of shredded cheese over the top, along with optional jalapeños and olives. 
  8. Layer on the remaining tortilla chips (slightly crush them up or you can use broken up hard taco shells) and sprinkle on remaining cheese evenly over the top. 
  9. Add optional scallions, additional olives and jalapeños. 
  10. Bake in the oven for about 10 minutes or until cheese is super melty and the edges of tortilla chips become lightly browned and toasty.

To Serve 

  1. Garnish with anything you like: cilantro drops of hot sauce over the top, anything goes. 
  2. Serve with side bowls of salsamole, shredded lettuce, chopped tomatoes, salsa, guacamole, light sour cream or Greek yogurt, additional hot sauce, scallions and jalapenos. Dig in and enjoy!
