Thanksgiving salad

This Thanksgiving salad is a gorgeous, vibrant addition to any menu, bursting with apples, walnuts, feta and raisins topped with a light and refreshing lemon vinaigrette made with mustard and maple syrup. It's the perfect side dish to whip up in a matter of minutes!

Ingredients

Vinaigrette

  • 1 tbsp white balsamic vinegar
  • 1 tbsp freshly squeezed lemon juice
  • 1 tbsp apple cider vinegar
  • 2 tsp Dijon mustard
  • 1 tsp maple syrup
  • Salt and freshly ground pepper to taste
  • 2 tbsp walnut oil
  • 5 tbsp extra virgin olive oil

Salad

  • 5 cups chopped bitter hearty lettuces as radicchio, endive, frisée, Trevino
  • 2 firm sweet apples, cut in small cubes maybe 1/4 inch
  • 1/2 cup fresh herbs (dill, parsley chives)
  • 1/2 cup walnuts, chopped
  • 1/2 cup crumbled food quality regular or plant based feta
  • 1/4 cup raisins

Directions

For the Vinaigrette 

  1. Whisk together the lemon juice and vinegar, with the mustard, maple and garlic.
  2. Then slowly whisk in olive oil to thicken. 
  3. Season with salt and pepper and set aside for salad. 

For the Salad

  1. In a large bowl add lettuce, apples, fresh herbs (dill, parsley, chives), chopped walnuts, crumbled regular or plant-based feta and raisins. 
  2. Add the vinagrette and mix with your hands so everything is well coated. 
  3. Let stand for five minutes and serve. Enjoy!
