600 grams very ripe tomatoes, chopped

600 grams watermelon

1 teaspoon (5 milliliters) salt

1/4 cup (60 milliliters) sugar

1 tablespoon (15 milliliters) lime juice

2 tablespoons (30 milliliters) mint, finely chopped
Directions
- In a blender place the tomatoes, watermelon, salt, sugar, and lime juice. Blitz.
- Strain the mixture, through a fine sieve, into a bowl. Pour the blitzed mixture into a baking sheet. Add the mint to the mixture and stir.
- Freeze the liquid until frozen around the edges and slushy in the middle.
- Using a fork, stir the mixture to break up the ice into smaller ice crystals. Return the pan to the freezer.
- Repeat the process every half hour until it’s completely frozen and the texture of a snow.
