Tuna melt pita pizzas

  • 1 can tuna, drained and flaked
  • 1 cup chopped baby spinach
  • 2 tablespoons mayonnaise
  • 2 green onions, thinly sliced
  • Salt and freshly ground black pepper
  • 2 whole wheat pitas
  • 1/2 cup shredded sharp cheddar cheese
  • Chopped fresh parsley, for garnish


  1. Preheat the oven or toaster oven 375F.
  2. In a medium bowl, combine the tuna, spinach, mayonnaise, green onions, and salt and pepper. Stir well.
  3. Divide the mixture between the pitas and spread it evenly. Top each with half the cheese.
  4. Arrange the pitas on a baking sheet and bake for eight to ten minutes, until the cheese has melted and the pizzas are heated through. Garnish with parsley.
  5. Enjoy immediately
