Turkey wings two ways

Ingredients
Sauce:
3 tablespoons (45 milliliters) olive oil
1/4 cup (60 milliliters) shallots
1 tablespoon (15 milliliters) salt
1/4 cup (60 milliliters) red wine vinegar
3 tablespoons (45 milliliters) brown sugar
2 tablespoons (30 milliliters) lime juice
2 tablespoons (30 milliliters) smoked paprika
2 habanero peppers, seeded and chopped
Turkey wing:
24 turkey wings
2 cups (480 milliliters) flour
1 tablespoon (15 milliliters) salt
1 teaspoon (5 milliliters) ground pepper
1 tablespoon (15 milliliters) smoked paprika
1 teaspoon (5 milliliters) garlic salt
1 teaspoon (5 milliliters) onion powder
1 teaspoon (5 milliliters) baking powder
1 teaspoon (5 milliliters) chili powder
4 eggs, beaten
3 tablespoons (45 milliliters) milk
2 tablespoons (30 milliliters) hot sauce
oil for frying
225 grams medium sliced bacon, cut into bits and cooked until crispy
2 tablespoons (30 milliliters) chives, chopped
Directions
In a frying pan, heat oil over medium-high heat.
Add shallots, and cook for three to four minutes or until translucent.
Season with salt, and add red wine vinegar.
Bring to a boil and cook for two to three minutes before adding brown sugar.
Heat brown sugar until completely dissolved, and add lime juice and paprika. Bring to a simmer, and add habanero peppers.
Finally, simmer for three to four minutes and remove from heat. Set aside sauce for turkey wings.
In a mixing bowl, combine flour, salt, pepper, garlic salt, onion powder, smoked paprika, baking powder and chili powder.
In a separate mixing bowl, whisk together eggs, hot sauce and milk.
Toss wings in the egg mixture, and then the flour mixture, and place on a baking tray. Repeat process until all wings have been properly coated.
If deep-fried, cook wings in oil at 375oF (190oF) degrees for 10-12 minutes or until golden brown and tender.
If grilled, cook over medium heat for 12-15 minutes or until slightly charred and tender.
Remove from heat and place in a mixing bowl.
Add sweet and spicy habanero sauce and toss until all wings are nicely coated.
Place on a serving tray and garnish with bacon bits and chives.
