The quality of each ingredient in this simple spicy dip is essential to get that authentic Greek flavour. You can use any chile you like, starting with a small amount and then adding more if you feel daring.
5 ounces good quality Feta cheese, crumbled (150 grams)
4 ounces good quality ricotta cheese (120 grams)
1/2 teaspoon chile flakes or 1 freshly chopped chile
Juice of ½ lemon
1/4 cup extra virgin olive oil (50 millilitres)
In a food processor combine the cheeses, chiles and lemon juice. Pulse until blended.
Add the olive oil and pulse until light and smooth. Transfer to bowl, cover and refrigerate until ready to serve with grilled meats, pita or vegetables.
