Tyrokafteri (spicy feta dip)

The quality of each ingredient in this simple spicy dip is essential to get that authentic Greek flavour. You can use any chile you like, starting with a small amount and then adding more if you feel daring.

- 5 ounces good quality Feta cheese, crumbled (150 grams)
- 4 ounces good quality ricotta cheese (120 grams)
- 1/2 teaspoon chile flakes or 1 freshly chopped chile
- Juice of ½ lemon
- 1/4 cup extra virgin olive oil (50 millilitres)
