Tzatziki
Ingredients
- 1 1/2 cups (360 milliliters) thick full-fat yogurt
- 2 garlic cloves, grated
- 1/4 cup (60 milliliters) finely diced red onion
- 1/4 cup (60 milliliters) chopped dill
- Juice and zest of half a lemon
- 1 teaspoon (5 milliliters) ground black pepper
- 1 medium cucumber
- 1/2 teaspoon (2.5 milliliters) salt
Directions
- Combine yogurt, garlic, red onion, dill, lemon juice and zest, and pepper in a bowl and set aside.
- Grate medium cucumber into a bowl and sprinkle with salt. Massage grated cucumber and squeeze into a small ball, draining as much fluid as possible.
- Stir drained cucumber into yogurt mixture and chill until ready to serve.
