Vegan vegetable tofu skewers

Satisfy the vegetarian in your crowd at your next camping adventure. 



  • 1 pint cherry tomatoes
  • 2 small zucchinis
  • 2 small yellow zucchini
  • 2 red peppers
  • 1 medium red onion
  • 1 lb firm tofu, pressed or tempeh
  • 1/2 cup olive oil
  • 2 cloves garlic, finely minced
  • 1/2 teaspoon red chilli flakes
  • 1 tablespoon oregano
  • 1 cup flat leaf parsley, finely minced
  • 1/2 cup mint, finely sliced
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice
  • Salt and black pepper, to taste


  1. Chop and largely dice all the vegetables and the tofu and skewer them any way you would like. 
  2. Make the marinade by adding olive oil, garlic, red chilli flakes, oregano, parsley, mint, lemon zest, lemon juice and salt and black pepper taste to a small bowl. 
  3. Brush some of the marinades over the skewers and grill over an open fire. Grill until slightly charred and soft. 
  4. Serve with the remaining marinade and enjoy!
