Ingredients

2 pieces of whole wheat matzah

1/4 cup pizza sauce

1/2 cup leftover cooked veggies (cooked diced bell peppers, zucchini, sliced olives, red onion, etc.)

1/4 cup grated mozzarella cheese

Basil leaves, for garnish
Directions
- Preheat oven to 375F. Lightly spray a baking sheet with oil.
- Place the matzo on a baking sheet. Top with pizza sauce, toppings and cheese. Bake for ten minutes until the cheese melts.
- Top with basil and enjoy.
