Vegetarian matzah pizza

  • 2 pieces of whole wheat matzah
  • 1/4 cup pizza sauce
  • 1/2 cup leftover cooked veggies (cooked diced bell peppers, zucchini, sliced olives, red onion, etc.)
  • 1/4 cup grated mozzarella cheese
  • Basil leaves, for garnish


  1. Preheat oven to 375F. Lightly spray a baking sheet with oil.
  2. Place the matzo on a baking sheet. Top with pizza sauce, toppings and cheese. Bake for ten minutes until the cheese melts.
  3. Top with basil and enjoy.
