Ingredients
Spices:
1 teaspoon fennel seeds
8 garlic cloves
1 cup chopped white onion
1 tablespoon coriander powder
1 bay leaf
1/2 teaspoon black pepper
2 black cardamoms
Other ingredients:
1 tablespoon olive oil
1 can (540 ml) white or navy beans (rinsed)
1 pound ground turkey meat
1 cup Sweet Apple Cider (Fermented kind, if not available, 1/2 cup of OJ + plain water + 2 tbsp of apple cider vinegar will do)
2 cups of Greens Options are: snow pea leaves, chopped gai-lan, spinach
Directions
Heat oil in the pan and add the fennel seeds and black cardamoms
Toss and turn heat to medium
Add the bay leaf and garlic and let it all saute.
After a couple of mins add chopped onions and let them cook on medium for five minutes till translucent.
Add the ground meat, beans, coriander powder, toss and let it cook on high for a couple of minutes
Turn to medium. Add the sweet apple cider, black pepper and salt (to taste) and mix it all together.
Put the lid on and let it simmer away for 30 minutes.
Open the lid, add the greens and toss. Turn the heat off and leave the lid on.
At the end, add the herbs of your choice. I often have parsley, coriander or basil. They all work.
Taste it for salt and check for liquid. My kids like it soupy, I like it mushy and chunky.
Serve with lime wedges,
