Cajun Shrimp, Andouille & Corn Camping Foil Packet

Ingredients

  • 450 g large shrimp, peeled and deveined
  • 250 g andouille sausage, sliced
  • 2 ears corn, cut into rounds
  • 300 g baby potatoes, halved and par boiled
  • 250 mL (1 cup) lager beer
  • 2 tbsp Cajun seasoning
  • 1 tbsp old bay seasoning
  • 30 mL (2 tbsp) melted butter
  • 1 lemon, cut into wedges
  • 2 green onions, sliced

Directions

  1. Preheat a campfire grill grate or barbecue to medium-high heat.
  2. Toss the potatoes, corn, andouille and shrimp with Cajun seasoning and butter.
  3. Divide evenly among 4 sheets of heavy-duty foil, lined with parchment paper.
  4. Add 60 mL (¼ cup) beer to each packet.
  5. Fold tightly to seal.
  6. Cook for 15–18 minutes, or until the potatoes are tender and the shrimp are opaque and cooked through.
  7. Carefully open and garnish with green onions and lemon wedges.
