  • 100 g unsalted butter
  • 150 ml whole milk
  • 2 tsp salt
  • grated nutmeg

Roasted Vegetables:

  • 3 carrots, 2 cm diced
  • 1 small celeriac, 2 cm diced
  • 2 turnips, 2cm diced
  • 2 tbsp vegetable oil
  • 1 tsp salt

Jamaican Patty Meat:

  • 900 g ground beef
  • 1 large onion, diced
  • 4 scallions, chopped
  • 4 cloves garlic, minced
  • 2 tbsp ginger, minced
  • 2 tbsp Jamaican curry powder
  • 2 tsp ground allspice
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Jamaican browning sauce
  • ½ Scotch bonnet pepper, minced
  • 4 branch fresh thyme
  • 350 ml beef stock
  • ¼ cup breadcrumbs
  • 2 tbsp vegetable oil
  • 1 ½ tsp salt
  • ½ tsp black pepper

Curried Crumpets:

  • 10–12 round crumpets
  • 200 g unsalted butter
  • 2 tbsp Jamaican curry powder
  • 2 tsp turmeric
  • 1 tsp salt

Directions

  1. Roast the vegetables: Preheat the oven to 425°F (220°C). Toss the carrots, celeriac and turnips with oil and salt. Roast for 25–30 minutes, until tender.
  2. Make the potatoes: Boil the potatoes for 18–20 minutes, until tender. Drain, then mash with the butter, milk and salt. Grate nutmeg.
  3. Cook the beef: Heat the oil in a large pan. Brown the beef and onion for 7–8 minutes. Add the scallions, garlic, ginger, curry powder, allspice, tomato paste, Scotch bonnet and thyme. Cook for 2 minutes. Add the Worcestershire sauce, browning sauce, stock, salt and pepper. Simmer for 10 minutes. Stir in the breadcrumbs and cook until thickened.
  4. Make the curry butter: Melt the butter and stir in the curry powder, turmeric and salt.
  5. Assemble: Reduce the oven to 400°F (200°C). Spread the mashed potatoes in the bottom of a deep, round casserole dish. Add the roasted vegetables, then the beef. Cut the crumpets in half and arrange them over the top, overlapping slightly. Brush generously with the curry butter.
  6. Bake: Bake for 20–25 minutes, until the crumpets are golden and crisp. Rest for 5 minutes before serving.
  7. To Serve: Scoop through all the layers so each serving includes the crispy crumpets, seasoned beef, vegetables and mashed potatoes.
