Spanish Seafood & Chorizo Camping Foil Packet Ingredients
- 400 g cod loin, cut into 4 cm chunks
- 120 g cured chorizo, sliced
- 500 g mussels, cleaned
- 1 small red onion, sliced
- 15 mL (1 tbsp) smoked paprika
- 2 cloves garlic, minced
- 125 mL (½ cup) dry white wine
- 1 lemon, sliced
- 30 mL (2 tbsp) olive oil
- Handful chopped parsley
- Salt and pepper, to taste
Directions
- Preheat a campfire grill grate or barbecue to medium-high heat.
- Divide the onion among 4 large sheets of heavy-duty foil, lined with parchment paper.
- Top with cod, chorizo and mussels.
- Sprinkle with smoked paprika and garlic. Drizzle with olive oil and white wine.
- Season lightly with salt and pepper and top with lemon slices.
- Fold the foil tightly into sealed packets.
- Cook for 12–15 minutes, or until the mussels have opened and the cod reaches an internal temperature of 63°C (145°F).
- Carefully open the packets and finish with parsley.
