Spanish Seafood & Chorizo Camping Foil Packet

Ingredients

  • 400 g cod loin, cut into 4 cm chunks
  • 120 g cured chorizo, sliced
  • 500 g mussels, cleaned
  • 1 small red onion, sliced
  • 15 mL (1 tbsp) smoked paprika
  • 2 cloves garlic, minced
  • 125 mL (½ cup) dry white wine
  • 1 lemon, sliced
  • 30 mL (2 tbsp) olive oil
  • Handful chopped parsley
  • Salt and pepper, to taste

Directions

  1. Preheat a campfire grill grate or barbecue to medium-high heat.
  2. Divide the onion among 4 large sheets of heavy-duty foil, lined with parchment paper.
  3. Top with cod, chorizo and mussels.
  4. Sprinkle with smoked paprika and garlic. Drizzle with olive oil and white wine.
  5. Season lightly with salt and pepper and top with lemon slices.
  6. Fold the foil tightly into sealed packets.
  7. Cook for 12–15 minutes, or until the mussels have opened and the cod reaches an internal temperature of 63°C (145°F).
  8. Carefully open the packets and finish with parsley.
