Green Olive Tapenade Pasta Salad

Ingredients (extra ingredients listed in directions)

  • 1 clove garlic
  • 1 cup pitted Picholine olives
  • 1 tablespoon capers
  • 4 anchovy fillets, packed in olive oil
  • Handful of fresh parsley
  • Zest and juice of 1 lemon
  • 1/4 cup olive oil
  • Freshly cracked black pepper
  • Pasta (optional serving + type)

Directions

  1. Add the ingredients to a food processor.
  2. Drain the pasta and toss with the tapenade.
  3. Allow to cool to room temperature.


Giardiniera Chicken or Fish

Ingredients (extra ingredients listed in directions)

  • 1 jar of mild or spicey giardiniera
  • Handful of fresh delicate herbs like basil and parsley, roughly chopped
  • Handful of almonds roughly chopped
  • Handful of golden raisins

Directions

  1. Drain the giardiniera reserving the oil.
  2. Finely chop giardiniera (or pulse in a food processor).
  3. Fold with fresh herbs, raisins and almonds.
  4. Serve over grilled chicken or roasted salmon.


Spicey Jarred Eggplant on Burrata with Fresh Bread

Ingredients

  • Burrata
  • Toasted butter bread
  • Spicey eggplant

Directions

  1. Spoon eggplant over burrata or serve on the side.


Pickle Juice Brined Chicken

Ingredients (extra ingredients listed in directions)

  • Jar of pickles

Directions

  1. Use your leftover pickle brine to brine a chicken before grilling or roasting. The result: delicious, tender, juicy chicken infused with dill and garlic.
  2. Place a whole chicken in a bag with brine. Let marinate over night in the refrigerator. Pat dry with paper towel and discard brine. Grill or roast chicken.
