Green Olive Tapenade Pasta Salad
Ingredients (extra ingredients listed in directions)
1 clove garlic
1 cup pitted Picholine olives
1 tablespoon capers
4 anchovy fillets, packed in olive oil
Handful of fresh parsley
Zest and juice of 1 lemon
1/4 cup olive oil
Freshly cracked black pepper
Pasta (optional serving + type)
Directions
Add the ingredients to a food processor.
Drain the pasta and toss with the tapenade.
Allow to cool to room temperature.
Giardiniera Chicken or Fish

1 jar of mild or spicey giardiniera
Handful of fresh delicate herbs like basil and parsley, roughly chopped
Handful of almonds roughly chopped
Handful of golden raisins
Directions
Drain the giardiniera reserving the oil.
Finely chop giardiniera (or pulse in a food processor).
Fold with fresh herbs, raisins and almonds.
Serve over grilled chicken or roasted salmon.

Pickle Juice Brined Chicken

Directions
Use your leftover pickle brine to brine a chicken before grilling or roasting. The result: delicious, tender, juicy chicken infused with dill and garlic.
Place a whole chicken in a bag with brine. Let marinate over night in the refrigerator. Pat dry with paper towel and discard brine. Grill or roast chicken.
