We all scream for ice cream during the hot summer months and these days, treating yourself goes far beyond a basic vanilla cone.  There are so many unique flavours and epic creations to satisfy your sweet tooth and keep you cool. Toronto baker, Colin Asuncion shares his favourite ice cream desserts to inspire you this season.

No-Churn Ice Cream

>Homemade ice cream is such an absolute delight and honestly, a total flex when entertaining, but who has room for an ice cream maker? Luckily no-churn ice cream does not require an ice cream maker - all you need is an electric mixer, a bowl, and a loaf pan, and you can make delicious homemade ice cream at home.

Croissant ice cream sandwiches

We’ve all had ice cream sandwiches with cookies or waffles, but have you had a croissant ice cream sandwich? It’s truly next-level. The flaky buttery croissant is the perfect vehicle for creamy, sweet ice cream, adding nice contrast and a truly decadent experience. It’s giving Marie Antoinette at the carnival, “Let them eat ice cream sandwiches!”

Grasshopper ice cream pie

Grasshopper pie is a tasty refreshing dessert that has no grasshoppers in it! It gets its name from the grasshopper cocktail which is a chocolate mint concoction that dates back all the way to 1918.  This variation has a chocolate cookie crumb crust - you simply mix together cookie crumbs, melted butter, and sugar, and press that into a pie pan.

Halo Halo (the ultimate Filipino frozen dessert)

Hailing from the Philippines, it’s sort of like a tropical fruit salad, a snow cone, and an ice cream sundae had a baby.

Blueberry ginger ice cream cake

This is a simple way to create a show-stopping dessert with just a few ingredients. It is truly so easy and the payoff is huge. Real wow factor with this dessert. The candied ginger adds brightness and some punch to the sweet ice cream.
