Smashed cucumbers

A delightfully fresh appetizer perfect for any occasion.

Ingredients

  • 4 cucumbers (ideally Persian or English)
  • 1-2 garlic cloves, minced
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 3 tablespoons rice vinegar
  • 1 teaspoon fish sauce (optional)
  • Chilli oil, or crushed chili flakes, to taste (optional)
  • 1 teaspoon sesame seeds (optional)

Directions

  1. Roughly peel cucumbers, leaving some peel on for colour.
  2. Using a meat tenderizer, rolling pin or any other blunt weighty object, lightly bruise cucumbers so that the flesh separates a bit, allowing it to absorb the marinade. Cut cucumbers into one-inch-thick rounds.
  3. Transfer cucumber to a bowl or resealable bag. Add garlic, sesame oil, soy sauce, rice vinegar, fish sauce and chilli oil. Stir or shake to distribute the marinade, then place in the fridge for a minimum of one hour.
  4. Pour off excess marinade and transfer cukes to a serving bowl. Top with sesame seeds and serve immediately. Enjoy!
