Ingredients

  • Cedar tea
  • Cranberry juice
  • Local honey
  • Ice
  • 1 bottle (750ml) sparkling water, unflavoured
  • Extra cedar springs and cranberries for garnish

Directions

  1. To make cedar tea, gather and wash clean roughly one cup of fresh green cedar leaves (remove any woody stems). Cedar fresh from a quiet forest is best! Remember to thank the tree for harvesting its leaves. Add leaves to one medium-sized pot of boiling water and simmer on low heat for five to 15 minutes (depending on how strong you’d like the tea). The tea should be golden in colour with a fresh, piney / minty scent and taste. Strain and set aside to cool.
  2. In your glass, add one oz. cranberry juice, a half teaspoon of honey, and two oz. cedar tea. Stir well to incorporate the honey.
  3. Fill the glass with ice.
  4. Top up the glass with sparkling water. Garnish with a cedar spring and/or cranberries. Enjoy!
