Flambéed tropical fruit in a rum caramel sauce

A flambéed dessert that will take you on a tropical getaway with every bite. 

YIELDS

Ingredients

  • 1/4 cup dried apricots, diced
  • 1/4 cup dried papaya, diced
  • 1/4 cup dried mango, diced
  • 2 tablespoons dried ginger, diced
  • 4 tablespoons unsalted butter , diced
  • 3 tablespoons brown sugar
  • 3 tablespoons brown sugar
  • 1 oz rum

Directions

  1. Preheat BBQ to medium high heat. 
  2. Place cast iron skillet the bbq.  Add butter to the hot skillet. Add brown sugar and cook for one minute while stirring to dissolve the butter making a caramel.
  3. Add the diced dried fruits and stir to combine.
  4. Once ready, add the rum and using a bbq light, set the rum aflame, allow the flame to burn until it goes out.
  5. Serve the fruit over top of your favourite ice cream. Enjoy!
