Grilled fruit Eton mess with meringue and cream

Ingredients

  • 12 meringue cookies
  • 1/2 lb frozen strawberries
  • 8 slices of fresh pineapple, cubed
  • 2 cups of whipped cream
  • Fresh basil, optional garnish

Directions

  1. Preheat grill to medium high heat
  2. Place pineapple pieces onto a high heat grill to char for 30 to 60 seconds a side. 
  3. Heat a cast iron skillet on the grill.  Add butter and brown sugar. Add frozen strawberries and swirl often. 
  4. Remove the fruit from the grill and set aside until ready to build.
  5. Place meringues into a sealable plastic bag and close. Gently smash and bread the meringue into chunks. Place broken meringue into a bowl. Top with whipped cream and stir gently.
  6. Place one third of the whipped cream mixture into your serving bowl. Add one-third of fruit. Add more whipped cream and meringue and more fruit. And finish with last of the meringue and fruit, drizzling with the strawberry juice in the skillet.
  7. Garnish with fresh basil if desired. 
  8. Serve immediately. Enjoy!
