Grilled fruit Eton mess with meringue and cream

Ingredients
- 12 meringue cookies
- 1/2 lb frozen strawberries
- 8 slices of fresh pineapple, cubed
- 2 cups of whipped cream
- Fresh basil, optional garnish
Directions
- Preheat grill to medium high heat
- Place pineapple pieces onto a high heat grill to char for 30 to 60 seconds a side.
- Heat a cast iron skillet on the grill. Add butter and brown sugar. Add frozen strawberries and swirl often.
- Remove the fruit from the grill and set aside until ready to build.
- Place meringues into a sealable plastic bag and close. Gently smash and bread the meringue into chunks. Place broken meringue into a bowl. Top with whipped cream and stir gently.
- Place one third of the whipped cream mixture into your serving bowl. Add one-third of fruit. Add more whipped cream and meringue and more fruit. And finish with last of the meringue and fruit, drizzling with the strawberry juice in the skillet.
- Garnish with fresh basil if desired.
- Serve immediately. Enjoy!
