Chicken and waffles with maple rum gravy

Ingredients

Fried Chicken

  • 6 pieces boneless skin on chicken thigh
  • 2 cups local Ontario buttermilk
  • 3 cups all-purpose flour
  • 1/2 cup hot sauce
  • 1 tablespoon black pepper
  • 1 tablespoon salt
  • 1/2 tablespoon paprika
  • 1/2 tablespoon onion powder
  • 1 tablespoon garlic powder

Maple gravy

  • 2 tablespoon salted local Ontario butter
  • 3 tablespoon all-purpose flour
  • 2 cups heavy local Ontario whipping cream
  • 2 oz rum
  • 3 oz maple syrup

Waffles

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 2 cups local Ontario milk
  • 1/4 cup melted local Ontario butter
  • 2 teaspoons vanilla extract
  • 2 eggs
  • Pan spray

Serve

  • 2 tablespoons powdered sugar
  • 1 bunch of thinly cut scallions

Directions

Fried Chicken

  1. Place chicken pieces in a bowl and add buttermilk and hot sauce. Cover and place in the fridge for eight hours.
  2. In a mixing bowl, add flour and all your spices. Mix together.
  3. Add each marinated chicken piece to the bowl and gently cover with flour. Place on a separate plate when wholly covered.
  4. Place a skillet in the oven on medium heat and add oil. When oil is hot, add chicken and cook for eight to 10 minutes until chicken is golden brown. Use your thermometer and make sure the temperature is 165 F.
  5. Place on a plate with a paper towel underneath to absorb the excess oil.

Maple Gravy

  1. Heat a pot on the stove on low. When the pool is warm, add butter, maple syrup and rum. Let all three ingredients melt together.
  2. Add your flour and mix for one minute. Then, slowly add your cream while you are still whisking. 
  3. Let the gravy thicken and leave it on the stove until ready to serve.

Waffles

  1. Heat your waffle iron and spray with pan spray or line with butter.
  2. Take a mixing bowl and place all your dry ingredients in it. In a separate bowl, add your wet ingredients and mix.
  3. Combine both bowls and mix together gently. The batter should be thick. If it is too thick, add a bit more milk.
  4. Place in your waffle maker and cook for five minutes until they are golden brown.

Serve

  1. Place one or two waffles stacked on top of each other. Add two pieces of fried chicken on top. Pour hot gravy on top of the chicken. Garnish with powdered sugar and thinly sliced scallions. Enjoy!
