Creamy feta and savoury caramelized onions are the perfect pair as a topper on crusty crostini.

Ingredients
2 cups of red onions, thinly sliced
Olive oil
Feta or goat cheese, even a gorgonzola or blue cheese
Chopped thyme
Salt and black pepper, to taste
Directions
Cooking the sliced onions in a nonstick frying pan being careful not to burn them. Sweat them for about half an hour over low heat until they become sweet and nutty – keep stirring.
Pile on top of the toast at room temperature and sprinkle with the crumbled cheese, thyme, and salt and pepper. Enjoy!
