Feta and caramelized onion crostini

Creamy feta and savoury caramelized onions are the perfect pair as a topper on crusty crostini. 



  • 2 cups of red onions, thinly sliced
  • Olive oil
  • Feta or goat cheese, even a gorgonzola or blue cheese
  • Chopped thyme
  • Salt and black pepper, to taste


  1. Cooking the sliced onions in a nonstick frying pan being careful not to burn them. Sweat them for about half an hour over low heat until they become sweet and nutty – keep stirring.
  2. Pile on top of the toast at room temperature and sprinkle with the crumbled cheese, thyme, and salt and pepper. Enjoy!
