Rodney’s winter pina colada

This tropical drink isn't just for those hot summer days, bring the sunshine into the winter with this version.

Ingredients
Pineapple Tea
- One whole pineapple peel, washed well
- 500ml water
- 1 cup ice
- Good size knob of ginger, sliced
- 4-5 cloves
- 1 cinnamon stick
- 1/2 teaspoon turmeric
- 2 tablespoons lemon juice
Pina Colada
- 1/2 fresh pineapple, peeled, cut into 1 1/2-inch pieces
- 1 cup coconut cream or milk
- 1 cup pineapple tea
- 1/2 cup white rum
- 1/4 cup maple syrup
- Juice of one lime
- 1/4 cup dark rum
Directions
Pineapple Tea
- Add pineapple peel, water, ice, ginger, cloves, cinnamon stick, turmeric, and lemon juice to a pot and bring to a boil. Let simmer for 10 to 15 minutes and strain and add ice if you want to cool it down. Set aside for cocktail.
Pina Colada
- Cut your skin off the pineapple and set it aside and then cut it into one-inch pieces.
- Purée one cup of pineapple, hot pineapple tea coconut milk, rum, lime juice, and maple syrup (if desired) until frothy.
- Garnish and serve immediately or put into a fridge to chill. Enjoy!
