Ingredients
2 cups all purpose flour
2 teaspoons baking powder
3 tablespoons sugar
1/3 butter, cut into cubes
Pinch of salt
1/2 teaspoon vanilla extract
1/2 cup buttermilk
2 eggs
Directions
Preheat oven to 400°F.
In a mixing bowl place all-purpose flour, baking powder, and sugar and mix well.
Next, add the diced butter and gently work into the dry mix with fingertips until a coarse crumble texture and a small piece of butter are formed.
Beat one egg and mix with the buttermilk and vanilla extract. Add this mixture to the dry ingredients and gently work to form a dough ball, dust the countertop with a little flour and gently form the dough mixture into a three-quarter thick piece using your hands and a rolling pin.
Cut the scones approximately two and a half in diameter and place them onto a baking sheet lined with parchment paper. Brush with egg wash and bake for approximately eight to 10 minutes until light golden brown.
Once cooked place on cooling rack and allow to cool before serving. Enjoy!
