Scones

Add these simple yet delish scones to your Mother's Day brunch spread.

Ingredients
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 3 tablespoons sugar
- 1/3 butter, cut into cubes
- Pinch of salt
- 1/2 teaspoon vanilla extract
- 1/2 cup buttermilk
- 2 eggs
Directions
- Preheat oven to 400° F.
- In a mixing bowl place all-purpose flour, baking powder, and sugar and mix well.
- Next, add the diced butter and gently work into the dry mix with fingertips until a coarse crumble texture and a small piece of butter are formed.
- Beat one egg and mix with the buttermilk and vanilla extract. Add this mixture to the dry ingredients and gently work to form a dough ball, dust the countertop with a little flour and gently form the dough mixture into a three-quarter thick piece using your hands and a rolling pin.
- Cut the scones approximately two and a half in diameter and place them onto a baking sheet lined with parchment paper. Brush with egg wash and bake for approximately eight to 10 minutes until light golden brown.
- Once cooked place on cooling rack and allow to cool before serving. Enjoy!
