Baby Pear Punch

A bright and light mocktail perfect to serve in a punch bowl to ladle out to guests.

Ingredients
Honey-Base Syrup
- 1 cup water
- 3/4 teaspoon bee pollen
- 2 cups high-grade amber honey
Baby Pear Punch
- 4–5 sprigs thyme
- 10 oz Seedlip Spice 94
- 1 lemon, cut into thin slices
- 1/2 Bartlett pear, cut into thin slices
- 10 oz pear juice
- 5 oz apple cider
- 5 oz Honey-Base Syrup
- 5 oz lemon juice
- 20 oz chilled green tea
Directions
Honey-Base Syrup
- In a small saucepan, bring water to a simmer over medium-high heat. Add bee pollen and stir.
- Add the honey and turn the heat to low.
- Stir until honey is integrated and bee pollen is dissolved.
- Finely strain out all solids using a cheesecloth on a colander and let it cool. Bottle and refrigerate for up to 3 months.
Baby Pear Bunch
- Use a lighter to toast the thyme sprigs until fragrant lightly. Blow out any flames and place the toasted sprigs in a large punch bowl (at least 128 oz in volume).
- Add Seedlip Spice 94.
- Add lemon and pear slices. Stir and let sit for 10–15 minutes to infuse.
- Add the rest of the ingredients and stir it. (The chilled green tea will dilute the punch in place of water.)
- Add a few giant ice cubes and stir. Serve immediately by spooning into small punch cups. Enjoy!
