The independent cocktail

Think of this non-alcoholic drink as a Mai Tai meets Pina Colada with a bit of tamarind.

Ingredients

Tamarind Syrup

  • 2 tablespoons tamarind paste
  • 1/2 cup granulated sugar
  • 1/2 cup water

Cocktail

  • 2 oz pineapple juice
  • 1 oz tamarind syrup
  • 1/2 oz freshly squeezed lime
  • 1 oz almond milk
  • 3 sprigs mint

Directions

Tamarind Syrup

  1. In a small saucepan, add two tablespoons of tamarind paste, with half a cup of granulated sugar, and add half a cup of water. Let this come to a simmer and break down the tamarind paste. Simmer for approximately three to five minutes. Strain.
  2. Store in fridge, for up to two weeks. This recipe makes enough for four drinks.

Cocktail 

  1. In a shaker, add one sprig of mint (stem removed), pineapple juice, tamarind syrup, lime juice, and almond milk. Give this a good shake and strain over fresh ice. 
  2. Top with a beautiful bouquet of mint (two remaining sprigs). Enjoy!
