Baked wild herb crusted rainbow trout

Ingredients

  • 4 wild leek/ramps with tops, washed
  • 1 clove garlic, crushed
  • 4 sprig parsley, chopped
  • 2 sprigs dill
  • 1 rainbow trout fillet
  • Salt and black pepper, to season

Directions

  1. Preheat oven to 375° F. 
  2. Using a food processor, add in wild leeks, garlic, parsley, and dill, and pulse until well chopped. 
  3. Rinse the trout under cold running water and place them on a baking sheet. Pat dry the trout with a paper towel. 
  4. Spoon Wild Herb Mix onto fish and season with salt and pepper.
  5. Place in oven for 15 minutes and place on your favorite dish to serve. Enjoy!
