Baked wild herb crusted rainbow trout

Use fresh herbs to flavour your rainbow trout.

Ingredients
4 wild leek/ramps with tops, washed
1 clove garlic, crushed
4 sprig parsley, chopped
2 sprigs dill
1 rainbow trout fillet
Salt and black pepper, to season
Directions
Preheat oven to 375° F.
Using a food processor, add in wild leeks, garlic, parsley, and dill, and pulse until well chopped.
Rinse the trout under cold running water and place them on a baking sheet. Pat dry the trout with a paper towel.
Spoon Wild Herb Mix onto fish and season with salt and pepper.
Place in oven for 15 minutes and place on your favorite dish to serve.
