Baked wild herb crusted rainbow trout

Use fresh herbs to flavour your rainbow trout.

Ingredients
- 4 wild leek/ramps with tops, washed
- 1 clove garlic, crushed
- 4 sprig parsley, chopped
- 2 sprigs dill
- 1 rainbow trout fillet
- Salt and black pepper, to season
Directions
- Preheat oven to 375° F.
- Using a food processor, add in wild leeks, garlic, parsley, and dill, and pulse until well chopped.
- Rinse the trout under cold running water and place them on a baking sheet. Pat dry the trout with a paper towel.
- Spoon Wild Herb Mix onto fish and season with salt and pepper.
- Place in oven for 15 minutes and place on your favorite dish to serve. Enjoy!
