These tropical-themed cookies will add a bit of zip and brightness to your holiday cookie selection. You can marble the dough with food colouring for a gorgeous and unexpected look to these treats.

6 cups all purpose flour
1/2 cup shredded sweetened coconut flakes
1 1/2 teaspoons baking powder
3/4 teaspoons salt
1 1/2 cups unsalted butter, room temperature
3 cups granulated sugar
3 large eggs, room temperature
Zest of 3 limes, finely grated
Gel food colourings of your choice
Directions
Preheat oven to 350 degrees F. Spread coconut flakes on a baking sheet. Toast in the oven for three to five minutes. Set aside.
Whisk flour, baking powder, lime zest, and salt in a large bowl. With an electric mixer, cream butter and sugar until light and fluffy. Beat in egg. With the mixer on low, gradually add the flour mixture; beat until combined.
Remove half the dough from the bowl and set aside. Add food colouring to the dough in your mixing bowl until incorporated. You can do as many colours as you like - divide the dough into the colours you’d like to work with.
Remove the coloured dough from the bowl and combine it with the uncoloured dough, folding it with your hands until the desired marbled look is achieved.
Divide dough in half; flatten into disks. Wrap each in plastic; refrigerate until firm, at least 1 hour.
Line baking sheets with parchment paper. Remove one dough disk from the fridge and let sit at room temperature for 5 to 10 minutes. Roll out to 1/8 inch thickness, dusting the dough with flour as needed. If the dough gets too soft or sticky while rolling it out, chill for 10 minutes and continue working with it.
Cut dough into various holiday shapes and transfer to prepared baking sheets.
Bake, rotating halfway through, until edges are golden, 12 to 14 minutes. Cool completely on wire racks. Enjoy!
