Ingredients
1/3 cup crumbled blue cheese (use a creamy variety)
1/3 cup goat cheese, softened
1/3 cup roasted and unsalted pistachios, finely chopped
8 large Medjool dates, pitted
4 slices of bacon, cut in half crosswise
2-3 tablespoons maple syrup
Cracked black pepper
Directions
Preheat oven to 375°F and line a baking sheet with parchment paper.
In a mixing bowl, add the blue cheese, goat cheese and pistachios and mix to combine.
Carefully open each pitted date and stuff it with the cheese mixture. Wrap each stuffed date with a half-slice of bacon, securing it with a toothpick through the centre. Make sure the bacon covers the date and cheese completely.
Arrange the stuffed dates on the prepared baking sheet, seam side down, to prevent them from unwrapping during baking, brush the maple syrup all over the dates, and season generously with pepper.
Bake for approximately 15-20 minutes or until the bacon is crispy and cooked and the cheese is bubbling.
Remove from the oven and let cool for a few minutes before serving. The cheese inside will be hot, so be careful when taking a bite. Enjoy!
