Dr. Somebody Cocktail

Tong sui is a delicate, sweet, and floral Chinese dessert made with snow fungus, red dates, goji berries, and rock sugar (occasionally, there may also be a pear).

Ingredients

  • 1/4 Asian pear, cut into small cubes
  • 1 oz scotch
  • 1 oz Lillet Blanc
  • 1/4 oz Easy Rich Syrup
  • 3/4 oz lemon juice
  • Pear fan, for garnish

Directions

  1. In a cocktail shaker, muddle Asian pear to release juices, then add all ingredients except the pear fan.
  2. Add enough ice to cover the liquid in the shaker, plus a bit more.
  3. Cover and shake vigorously for 10 to 15 seconds.
  4. Strain through a Hawthorne strainer into a 12-oz rocks glass over fresh ice cubes.
  5. Garnish with the pear fan. Enjoy!
