The Dill Pickle Party Sub

This sub celebrates the almighty dill pickle and uses it in different ways to create a perfect sandwich for any pickle lovers in your life. (And we should all be pickle lovers!)

Ingredients
Honey dill aioli
- 1/2 cup dill relish
- 1/2 cup mayonnaise
- 2 tablespoons dijon mustard
- 2 tablespoons honey
- 1 tablespoon finely chopped fresh dill
Party Sub
- 1 long English cucumber, quartered and thinly sliced
- 6 large dill pickles, cut into spears
- 12 slices dill havarti
- 4 cups shredded lettuce
- 1 cup shredded dill pickles
- 1 tablespoon olive oil
- 1 tablespoon pickle brine
- 4 cups dill pickle potato chips for a crunch, optional
- 6 sub buns, sliced open,all ends trimmed except for 1 end on two buns to create extra-long “party sub” effect
Directions
Honey dill aioli
- Place all ingredients in a small mixing bowl and stir to combine.
Party Sub
- Slather aioli generously on each half of the sub buns before evenly layering on sliced cucumbers, dill pickle spears and Havarti.
- Place shredded lettuce and pickles in a medium bowl with olive oil pickle brine and toss to coat.
- If desired, distribute evenly across all subs and top with dill pickle potato chips.
- Line up subs to form one giant “party sub,” staking with toothpicks and cutting into desired portions. Enjoy!
