Barley pulao

Ingredients

Barley:

  • 1 cup barley rinsed and soaked for 30 min to 6 hours.
  • 2 cups water
  • 1/4 teaspoon salt
  • 1 teaspoon canola or another mild-tasting oil

Pulao:

  • 1 tablespoon oil or ghee
  • 1 teaspoon whole cumin seeds whole
  • 1/2 tesapoon turmeric
  • 2 cloves chopped garlic
  • 1/4 cup chopped onions
  • 1/4 cup other veggies like zucchini, bean sprouts, peas or carrots

Directions

  1. Bring the water to a boil and then turn to low simmer with the lid on for 35 minutes.
  2. In another pan add the oil and bring it to heat
  3. Turn the heat to medium and add the cumin seeds. Let them sputter for 20 secs or so.
  4. Add the turmeric, onions and garlic and cook till onions are translucent.
  5. Add the other veggies or sprouts and cook for another five minutes.
  6. Turn the heat off and let this mixture rest.
  7. Once the barley is cooked, add the fried mixture into the grains and toss really well. Serve warm with the White Bean Chilli.
