Ingredients

3/4 cup quick-cooking rolled oats

1 1/2 cups water

1 cup frozen blueberries

2 tablespoon water

1 tablespoon organic cane sugar

1 teaspoon cornstarch

1/8 teaspoon ground cinnamon

1/4 teaspoon vanilla extract
Directions
- Combine the oats and water in a medium pot. Cook according to the package directions.
- Combine the frozen blueberries, water, sugar, cornstarch, cinnamon and vanilla
- in a separate small pot. Simmer over medium heat for 5 minutes, stirring occasionally, until thickened slightly.
- Evenly divide the cooked oats between 2 bowls. Pour the blueberry mixture overtop and serve.
