Blueberry pie oatmeal


  • 3/4 cup quick-cooking rolled oats
  • 1 1/2 cups water
  • 1 cup frozen blueberries
  • 2 tablespoon water
  • 1 tablespoon organic cane sugar
  • 1 teaspoon cornstarch
  • 1/8 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract


  1. Combine the oats and water in a medium pot. Cook according to the package directions.
  2. Combine the frozen blueberries, water, sugar, cornstarch, cinnamon and vanilla 
  3. in a separate small pot. Simmer over medium heat for 5 minutes, stirring occasionally, until thickened slightly. 
  4. Evenly divide the cooked oats between 2 bowls. Pour the blueberry mixture overtop and serve.
