Ingredients
BRUSCHETTA

6-8 slices of dense, crusty bread (preferably sourdough)

2 - 3 cups of roughly chopped fresh tomatoes

Extra virgin olive oil, to drizzle

Few cloves of garlic

Handful of fresh basil, shredded

Coarse salt
TOPPINGS

Roasted pine nuts

Goat cheese, crumbled

Prosciutto slices (optional)
Directions
- Preheat oven to 425°F.
- Place the slices on a baking sheet and brush each piece with olive oil then rub with fresh garlic.
- Bake for three minutes. Remove and flip over, baking for another three minutes. Set aside to cool.
- Meanwhile, toss tomatoes and basil with a good drizzle of olive oil in a bowl.
- Once the bread has cooled, generously heap the tomato and basil mixture on top, along with any optional toppings.
- Drizzle with olive oil, and sprinkle with coarse salt.
