Chia pudding with carrots and walnuts
Ingredients
- ½ cup of chia seeds
- 2 cups of your choice of fluid: (full fat milk, almond, cashew, or coconut milk or soy beverage)
- ¼ chopped pecans or walnuts
- 1 small grated carrot
- Cinnamon and ground nutmeg to taste (less than ¼ teaspoon each)
- 1 teaspoon sweetener of choice: maple syrup or stevia or 2 teaspoons of raisins
Directions
- In a medium air-tight container, add chia seeds to fluid of choice. Place in refrigerator overnight.
- In the morning, scoop out ½ cup of the expanded chia seed mixture into a small bowl.
- Add carrot, chopped nuts, cinnamon, nutmeg, and choice of sweetener.
