Chocolate chip banana bread breakfast cookies

A cookie has got to be one of the best ways to start your day! Simple yet so delicious, these portable treats are basically a superfood, packed with rolled oats, chia seeds, pumpkin seeds, flax meal and dried cranberries.

Ingredients

  • 2 bananas, mashed
  • 1-1/2 cups rolled oats
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup vegan dark chocolate chips
  • 1/2 teaspoon baking powder
  • Pinch of salt

Directions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. Place all the ingredients in a large bowl and mix until fully combined. Wet your hands and form into eight balls. Place at least one inch apart on the prepared pan. Flatten the balls with your hands or the back of a fork until they are approximately 1/2 inch thick.
  3. Bake for 12 minutes, or until a toothpick inserted into a cookie comes out clean.
