Corn succotash

A simple summer salad that serves a crowd. 



  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic, chopped
  • 3 green onions, finely sliced
  • 1/2 cup frozen lima or fava beans, thawed
  • 1/2 red bell pepper, diced finely
  • 2 ears corn, kernels cut from cob or 1 cup frozen corn, thawed
  • 1/4-1/2 teaspoon dried chipotle powder or pinch of cayenne powder
  • Salt and black pepper, to season


  1. In a large sauté pan over medium heat, add oil, butter, garlic and green onion.
  2. Cook for one minute, stirring a couple of times. Add beans, bell pepper and corn.
  3. Cook for five more minutes, stirring occasionally.
  4. Finish with chipotle, salt and pepper. Serve and enjoy!
