Corn succotash

A simple summer salad that serves a crowd.

Ingredients
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 cloves garlic, chopped
- 3 green onions, finely sliced
- 1/2 cup frozen lima or fava beans, thawed
- 1/2 red bell pepper, diced finely
- 2 ears corn, kernels cut from cob or 1 cup frozen corn, thawed
- 1/4-1/2 teaspoon dried chipotle powder or pinch of cayenne powder
- Salt and black pepper, to season
Directions
- In a large sauté pan over medium heat, add oil, butter, garlic and green onion.
- Cook for one minute, stirring a couple of times. Add beans, bell pepper and corn.
- Cook for five more minutes, stirring occasionally.
- Finish with chipotle, salt and pepper. Serve and enjoy!
