A simple summer salad that serves a crowd.

Ingredients
1 tablespoon olive oil
1 tablespoon butter
2 cloves garlic, chopped
3 green onions, finely sliced
1/2 cup frozen lima or fava beans, thawed
1/2 red bell pepper, diced finely
2 ears corn, kernels cut from cob or 1 cup frozen corn, thawed
1/4-1/2 teaspoon dried chipotle powder or pinch of cayenne powder
Salt and black pepper, to season
Directions
In a large sauté pan over medium heat, add oil, butter, garlic and green onion.
Cook for one minute, stirring a couple of times. Add beans, bell pepper and corn.
Cook for five more minutes, stirring occasionally.
Finish with chipotle, salt and pepper. Serve and
enjoy!
