Canadian Celebratory Nachos

Your crowd will love these squash nachos loaded with bacon, chorizo sausages, cheese, and sour cream.

Ingredients

Bacon

  • 10 thick-cut sliced bacon
  • 1/3 cup maple syrup
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon vinegar-based hot sauce
  • 1 teaspoon cracked black pepper

Butternut squash

  • 1 small butternut squash, peeled, seeded and cut into 1/2” cubes
  • 1 teaspoon olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper

Sour cream

  • 1 cup sour cream
  • 1 tablespoon maple syrup
  • 1 teaspoon cracked black pepper

Assembly

  • 4 chorizo sausages, casings removed
  • 546ml can of refried beans
  • 1 large bag of tortilla chips
  • 2-3 cups grated mozzarella (depending on how cheesy you like your nachos)
  • 1-2 jalapeño peppers, thinly sliced
  • 1 avocado, peeled and chopped
  • Cilantro, for garnish

Directions

  1. Preheat oven to 425° and line two baking sheets with foil.

Bacon

  1. Spread out bacon on the baking sheet that has the wrack; it’s okay if some of the bacon overlaps, as they will shrink in size as they cook. 
  2. Whisk together maple syrup, Worcestershire sauce, hot sauce, and pepper, and brush over both sides of the bacon. Clean the brush, as you’ll use it again once the bacon is cooked.  
  3. Place bacon into the hot oven and bake for 15 minutes, depending on how thick your bacon is. Remove from the oven and brush the bacon with any remaining maple syrup mixture. Remove the racks from the baking sheets and place the bacon on a plate to cool slightly. Once cooled, chop the bacon, return it to the plate, and set aside.

Butternut Squash 

  1. Add the butternut squash pieces to the second prepared baking sheet.  Add olive oil, salt, and pepper and toss to coat. Roast in the hot oven for 30 minutes. 
  2. Remove from the oven and transfer the squash to a plate. Let the baking sheet cool slightly, remove the used foil, and replace it with a fresh piece.

Chorizo and Sour Cream

  1. While the butternut squash is baking in the oven, you can cook the chorizo and make the sour cream. Add chorizo to a medium-sized saute pan over medium-high heat and break it up with a wooden spoon. Stir and cook the sausage until evenly browned. Remove from heat and set aside. 
  2. Add the sour cream to a small mixing bowl along with the maple syrup and pepper. Stir to combine and set aside.

Assemble and Serve 

  1. On the baking sheet lined with the clean foil, add all of the refried beans and smear in an even coating. Top with half the tortilla chips and evenly scatter half of the cooked chorizo, half the bacon, and half the squash. Top with half the cheese and repeat one more time.
  2. Place nachos in the oven for about 15 minutes or until the cheese is fully melted and bubbling. Garnish with jalapeños, avocado, cilantro, and sour cream. Enjoy!
