Sour cream and chive caviar chips

Traditionally caviar is enjoyed on blini (mini buckwheat pancakes), or mini potato pancakes, but sometimes we’re not in the mood for all that DIY-ing and want maximum results with minimum effort. The answer to that? Ridged potato chips!

Ingredients
- 250 ml sour cream or crème fraiche
- 1 bunch fresh chives, very finely chopped
- 1 bag ridged potato chips, plain salted variety
- 1 jar caviar
- 1 lemon, zest only
Directions
- Add all but about two teaspoons of the chopped chives to the container of sour cream or crème Fraiche and stir to combine. Set the remaining chives aside for garnish.
- Arrange potato chips on a serving platter and add about one-half to one teaspoon of chive sour cream to the center of each chip.
- Add a small dollop of caviar onto each chip on top of the sour cream.
- Sprinkle the remaining chives all over the platter.
- Zest the lemon all over the platter in a light dusting using a Microplane and serve. Enjoy!
